Spinach Soup Recipe

Spinach Soup is not only light but also a healthy soup and a great appetizer. Spinach Soup is a great soup for today’s busy lifestyle and perfect for every season. Spinach soup can be served either hot or chilled. Here is an easy recipe to help you prepare the nutritious spinach.

Ingredients for Spinach Soup

•    2 cups. Spinach, chopped
•    1 no. Onion, chopped
•    1 1/2 tbsp. refined flour(Maida)
•    2 tbsp. Butter
•    2 cups Milk
•    1 tbsp. Oil
•    To taste. Salt & pepper

Method to prepare spinach soup

1.  Blanch spinach in hot water.
2.  Remove and refresh in cold water.
3.  Heat oil in a kadhai/wok, add chopped onions and sauté.
4.  Add crushed garlic, salt and pepper.
5.  Puree together with boiled spinach.
6.  Make a thin white sauce by melting butter in a kadhai.
7.  Then add refined flour and cook for 5-7 minutes. Slowly add the milk so that no lumps are formed.
8.  Add the spinach puree to this and bring it to a boil. Add a little water if required.
9.  Serve spinach soup hot.
