Shahi Dum Aloo
Shahi Dum Aloo, also known as Aloo Dum Pukht, is popular Indian Curry dish. Almost all Indians like potatoes and when they are baby potatoes simmered in creamy & aromatic gravy made with cashews and flavoured with traditional Indian spices, they are awesome. Here is an easy recipe for home-cooked Shahi Dum Aloo. Shahi Dum aloo goes well with naan aor tandoori roti.
Ingredients for making Shahi Dum Aloo:
• 8 nos baby potatoes
• Ginger a small cube
• 1 onion
• 6 tbsp tomato puree
• 2 tbsp cream (fresh or frozen )
• 6 pods garlic
• 2-3 nos green chilli
• ¼ cup milk
• 10-12 nos cashews halves
• ½ cup water
• Sugar a pinch
• ¼ tsp garam masala
• Salt to taste
• ½ tsp chilli powder
• Oil to cook and deep fry
• ½ tsp coriander powder
• ¼ tsp turmeric powder
How To Prepare Shahi Dum Aloo :
1. Take the potatoes, wash and peel them properly. Take a kadhai/wok and heat oil in it. Deep fry potatoes in it and keep them aside.
2. Now add garlic, onion, chillies and ginger to a mixer and grind them to form a smooth paste.
3. Take a kadhai/wok and heat 2-3 tbsp of oil in it.Add cumin seeds to it and allow them to splutter.
4. Now add the onion garlic paste and sauté it till it becomes golden brown.
5. As the oil stars to seprate add tomato puree to it and cook till oil starts to separate again.
6. Add chilli powder and turmeric to it. Stir-fry well. Now add garam masala and little cream to it. Keep stiring. Now add milk to it and cook till it begins to boil. Stir continuously.
7. Milk might cuddle if it is not stirred well. Now add salt, sugar and water to it and cook for a minute.
8. Now add fried potatoes to it and cook on slow flame for 15-20 minutes. Cook till potatoes become tender. Tenderness of potatoes could be checked by using fork.
9. Add cashews to it when cooked.
10. Shahi Dum is ready to be served. Goes best with naan or tandoori roti.
