Malai Kofta Recipe

Malai Kofta is a popular dish for special occassions. Malai Kofta can be considered the vegetarian alternative to meatballs. Malai Kofta goes very well with naans and Jeera Rice. Here is an easy recipe for making Malai Kofta.

Ingredients for Making Malai Kofta:
For the koftas :
• 100 grams carrots, finely chopped
• 100 grams green peas
• 1 bread slice, soaked in water
• 250 grams potatoes, boiled and mashed
• 100 grams cauliflower, finely chopped
• oil for deep frying
• 100 grams French beans, finely chopped
• 1 tsp garam masala
• 1 tsp chilli powder
• 2 tbsp bread crumbs
• 1½ tsp lemon juice
• salt to taste
For the paste (for the koftas) :
• 25 mm (1″) piece ginger
• 9 garlic cloves
• 7 green chillies
For gravy :
• 750 grams tomatoes
• 1 tbsp cornflour
• 3 onions
• 4 tbsp butter
• 2 small cinnamon
• 4 cloves
• 1 tsp sugar
• salt and pepper to taste
• 1 tsp garam masala
• 1 tsp chilli powder
For the paste (for the gravy) :
• 25 mm (1″) piece ginger
• 15 garlic cloves
• 5 green chillies
For baking :
• 1 tbsp fresh cream
• ½ tbsp grated cheese

How To Prepare Malai Koftas:
For the koftas :
1. Boil the peas. Take a pressure cooker and steam carrots, French beans and cauliflower without adding water.
2. Now add  vegetables and peas to the potatoes and make a dough.
3. Add bread slice and 1 tbsp of bread crumbs. Put garam masala, lemon powder, paste and salt and mold into kofta balls.
4. Take the bread crumbs and roll koftas in it and deep fry in oil till it turns golden brown. Keep them aside.
For the gravy :
1. Boil tomatoes in hot water for few minutes. Take them out and make a puree.
2. Blend onions in a liquidiser with the help of little water.
3. Take a kadhai and heat butter in it. Add onions to it and sauté for 5 minutes. Cook it till I turns light brown.
4. Add paste, cloves and cinnamon and cook for 2 minutes. Add tomato puree and cook for 2 minutes. Add 1 tea cup of water and bring it to boil for 3-4 minutes.
5. Take a mixer and pour the mixture in it. Put corn flour and sugar and blend it. Cook it again and add garam masala, pepper, chilli powder and salt. Cook it for 5 minutes.
6. Keep koftas in an ovenproof dish. Pour the gravy over the koftas and also pour fresh cream over it. Garnish with grated cheese and bake or grill in a hot oven at 200ºC (400ºF) for 10-15 minutes till cheese melts.
7. Malai Kofta is ready to be served. Serve hot.
