Karela Masala is a favourite among the bitter gourd lovers. Karela masaledar is a side dish and can be had with plain roti or daal and rice. Try out the following Karela Masala recipe to prepare delicious Masaledar Karela (Bitter Gourd).

Ingredients for making Karela Masala:

• 3 karele
• 2 green chillies
• 2 to 3 pinches asafoetida
• ½ tsp ginger, grated
• ½ tomato, chopped
• Sour buttermilk to soak karele
• 4 to 5 tamarind pieces
• 1 tbsp molasses or sugar
• 1 stalk curry leaves
• ½ tsp each mustard & cumin seeds
• 1 ½ tsp red chilli powder
• 1 tsp dhania powder
• ¼ tsp turmeric powder
• 2 to 3 sprigs coriander, chopped
• ¼ tsp garam masala
• Salt to taste
• 1 tbsp oil

How to prepare masala karela (bitter gourd):

1. Take bitter gourd and cut them into thin discs. For 4-5 hours soak them in buttermilk. Drain and wash them thoroughly. Sprinkle some salt on them and keep them aside for 1 hour.

2. Rub the slices with hand after and hour and wash them thoroughly. Boil water and put them in boiling water. Boil till they become soft. Wash them again and keep them aside to dry.

3. Take a heavy based pan and heat oil in it. When the oil is hot add asafetida and seeds. Fry till they splutter.

4. Now add tomatoes, ginger, chillies, curry leaves and tamarind pieces. Stir- fry for some time.

5. Now add 1/2cup water in a bowl and all the dry masalas in order to form a paste. Add this to the pan.

6. Cook till the oil shows up. Now add karela slices to it. Add molasses and stir well. Cook on slow flame for about 3-4 minutes.

7. Masaledar Karela is ready to be served. Garnish with chopped coriander before serving.
