Baingan Bharta Recipe
Baingan Bharta can be referred to as an Indian version of Baba Ghanoush from Middle East. Baigan Bharta is prepared differently by different people. This one is famous form in North India. Baigan is roasted and is mixed with spices and onions and tomatoes. For all those who love brinjal (baingan), we provide you with steps to prepare baingan bharta. Follow the steps carefully and grabe your bite.
Ingredients For Making Baingan Bharta :
• 1 Eggplant/baingan, freshly baked or broiled
• 1 cup plain yogurt
• 2 green chilies, finely chopped
• 3 green onions (spring onions with greens)
• ½ tsp haldi
• 1 tsp garam masala
• 1 tsp ground coriander
• 2 tbsp cilantro leaves, finely chopped
• 1″ piece ginger, minced
• 1 tsp ground cumin
• 2 large cloves garlic, minced
• 2 tbsp ghee
• salt to taste
How To Prepare Baigan Bharta :
1. Take the brinjal and remove the skin and take out the pulp.
2. Take a kadhai and heat ghee and sauté the onion till it becomes translucent.
3. Put green chillies, ginger and garlic and fry them for a minute. Now add coriander powder, cumin powder and chilli.
4. Add garam masala, cilantro and salt to it and cook for a minute. Add the eddplant pulp and mix well. Cook for about 5-10 minutes and stir for few times. Then add the beaten yougurt.
5. Baigan Bhurta is ready to be served. Garnish with coriander leaves before serving.
