Lauki Raita is another popular raita (condiment) variety in India. Lauki (Milk Gourd) is known by various names in India such as Doodhi, Ghia, Lauki. The mild and neutral taste of lauki (Ghiya) goes well with most things. Combined with yogurt, lauki produces a great result called lauki ka raita. It tastes great with, meat curries, various types of daal, biryani etc.

 

Ingredients for preparing Lauki raita

  • 2 Cups Curd (Yogurt)
  • 1 cup grated Ghiya (lauki)
  • Red chili powder to taste
  • 1tsp Cumin powder
  • very little garam masala
  • Finely Chopped coriander leaves
  • salt to taste

 

How to prepare ghiya (lauki) raita

1.         First of all boil grated lauki till it become soft, drain the water and cool it.

2.         Stir the curd with hand mixer.

3.         Now add ghiya and mix well. If it becomes thick add little milk and mix it.

4.         Now add cumin powder, chili powder and salt.

5.         Sprinkle garam masala and garnish with chopped coriander, mix well.

6.         Keep in refrigerator for an hour.

7.         Serve lauki raita chilled with rice or parathas.
