Boondi Raita
Boondi Raita is a popular variety of raita/raitha of northern India. Boondi/Bundi raita is made with tiny balls of fried gramflour and curd. It is served usually wtih spicy food such as chhole, kebabs, biryani and many other non-vegetarian and vegetarian food dishes. Boondi Raita mixture is served chilled. Here is an easy Boondi Raita recipe to help you prepare the popular condiment.
Ingredients for preparing Boondi Raita
- 2 Cups Curd (Yogurt)
- 100 gms Gram flour (Besan)
- Red chili powder to taste
- 1/2tsp Roasted Cuminpowder
- very little garam masala
- Finely Chopped coriander leaves
- salt to taste
- Oil to fry
How to prepare Boondi raita
1. Add water to gram flour and mix well to spreading consistency.
2. Add salt & beat till it becomes light (you can check it by pouring 1 drop of it on water; it starts floating on the surface).
3. Now heat oil in a karai and pass the paste through draining spoon. Fry till they become golden and crisp. Keep them aside.
4. Stir the curd with hand mixer (mathani).
5. Now add boondi and again mix. If it becomes thick add little milk and mix it.
6. Now add cumin powder, chili powder and salt, mix well.
7. Sprinkle garam masala and garnish with chopped coriander leaves.
8. Serve boondi raita chilled with rice or parathas.
