Hot Lemon Pickle Recipe

Lemon pickle is unique in taste as it is tangy and hot at the same time. It tastes good with dal, rasam and sambhar and a variety of other dishes! It is a traditional condiment in India and would be served with virtually every meal. One can also try flinging a dollop of the hot lemon pickle into the pan while making home fries, sautéing any vegetable, or pan-searing a fish fillet. Try this easy to make Hot lemon pickle! 

Ingredients for making Hot Lemon Pickle:

  • 1 kg Lemons (Nimbu)
  • 250 grams Salt (Namak)
  • 2 teaspoons Turmeric (Haldi)
  • 3 teaspoons Red chili pepper (Lal Mirchi)
  • 125 grams Ginger (Adrak), scraped and sliced
  • 1 cup Vinegar (Sirka)
  • 125 grams Green Chilies (Hari Mirch)(slit)
  • 4 teaspoons fenugreek
  • 4 teaspoons Mustard seeds (Rai/Sarson)
  • 2 level teaspoons asafoetida
  • 1 ½  cups Mustard Oil (Sarson Ka Tel) 

How to make Hot Lemon Pickle:

  1. First of all cut each lemon into eight pieces.
  2. Then mix salt with lemons, keep in the sun for 15 days in the jar and shake it daily.
  3. Now heat oil till smokes.
  4. Then remove it from the fire and cool a little.
  5. Then fry asafoetida in it, fenugreek and mustard seeds.
  6. Now mix vinegar, ginger.
  7. Then add green chilies, chili powder and lemon with its juice.
  8. Finally keep 15 days in the sun.
