Mutton Shahi Biryani Recipe

Ingredients:

•    1/2 kg mutton-cut into small pieces
•    1 tsp cumin seeds
•    1 cup onions-finely sliced
•    1/4 cup clotted cream
•    ghee for frying the onions
•    1 bay leaf
•    2 tbsp chopped coriander leaves-to garnish

For Marinate (marinate for 4 hours)

•    1 tsp ginger paste
•    1 cup onions-grated
•    1 tsp garlic paste
•    1 tsp turmeric
•    salt to taste
•    1 cup yoghurt
•    1 tsp black cumin seeds
•    1 tsp garam masala

For Rice

•    2 cups basmati rice-cleaned and soaked in water
•    1/2 tsp saffron-soaked in 1/4 cup of warm milk
•    2 green cardamoms
•    2 tbsp ghee
•    2 cloves
•    1/2 tsp black cumin seeds
•    a piece of cinnamon-broken into smaller pieces
•    salt to taste

How To Prepare Mutton Shahi Biryani:

1.     Take a broad heavy based pan and heat enough ghee in it. Add onions to the heated ghee and fry the onions till they become brown and crisp.

2.    Remove and strain onions from the ghee. Put them on an absorbent paper and set aside.

3.    Take 1/2 cup of the ghee that is left in the pan. Now add the cumin seeds and bay leaf, stir-fry a few times till they change color a little. Do this on high flame. Add the meat mixture to it.

4.    Fry meat over high heat and stir it till the pieces look opaque. Partially cover and cook on low flame. Stir a few times till the meat becomes tender.

5.    Saute till fat separates and water dries. If the meat is still uncooked then add water and cook it for some more time.

6.    Now move the pan from stove and add cream, coriander leaves and the fried onions. Mix them well.

7.     Drain the rice and set aside. Heat 2 tablespoons of ghee and add the black cumin seeds, cardamom, cloves and cinnamon. Stir a few times and add the rice and the salt.

8.     Add 2 1/2 cups of water, and cook till the water boils. Slower the flame, cover and cook rice for 8minutes.

9.    Put off heat, leaving pan on stove. The rice should be almost done.

10.    Half an hour prior serving, divide the rice and meat into halves each. Remove half the meat out of the pan and leave one layer at the bottom. Spread this layer of meat well in the pan.

11.     Now cover this with a layer of half the rice and sprinkle half the saffron flavoured milk on it, and then add the second layer of meat and then add the other half of the rice. Sprinkle the remaining saffron mixture over rice.

12.    Use wheat flour to seal the pan and place on a griddle. Let it cook on slow flame for half an hour.

13.    Ovenproof dish could be used alternatively. It should be placed in a pre-heated oven for about half an hour.

14.    Mutton Shahi Biryani is ready to be served.
