Ingredients:
- 1 kg mutton-cut into 3 1/2 cm cubes and beaten flat
- 1/2 cup oil
- salt to taste
- 1 tbsp ginger paste
- 1/2 cup tomato puree
- 1 tbsp garlic paste
- 2 tsp chilli powder
- 2 tbsp coriander powder
- 1 tsp onion seeds
- 2 1/2 cups yoghurt
- 6-7 green cardamoms
- 6-7 cloves
- 2 tbsp poppy seeds-soaked, roasted and ground
- 2 pieces cinnamon
- 2 tbsp chopped coriander leaves
- 1 cup onion-chopped fine
- 1 cup tomatoes-cut fine
- 10-12 blanched and slivered almonds
- 1/4 cup cream
How To Prepare Mutton Pasanda:
1. Mix ginger, garlic and salt well. Marinate mutton pieces in the mixture for 4-5 hrs.
2. Take a large saucepan and heat oil in it. Add cinnamon, cardamoms and clove. Stir-fry till they become dark. Now add onions to it and fry till they become dark brown.
3. Add the marinated meat and cook on low flame till water evaporates and fat separates. If still the meat is not tender then add some water and cook till it becomes tender.
4. Add puree and tomatoes and sauté till the fat separates. Make sure that the meat pieces do not break. Add half almonds now. If you want to serve the dish with gravy, add a little water and cook for few minutes longer.
5. Mutton Pasanda is ready to be served. Garnish with rest of the almonds, cream and coriander leaves before serving.
