Luchi is a very popular Bengali food item. It is simple food and made with the principle of vaporization of water using dough. Luchi can be had with curry or fried potato or even with jam or sugar. Learn how to make Luchi by following this easy recipe.
Ingredients for making Luchi

• 11/3 cup  refined flour (Maida)
• 3 tbsp Melted Ghee
• 1/4 tsp Sugar (optional)
• 1/2 cup Warm Water or as needed
• 1/4 tsp Salt
• Ghee for deep frying

How to prepare luchi

1. Put flour, salt and sugar in a large bowl, mix it, and put the melted ghee into it and gradually using enough water to make stiff but pliable dough.
2. Cover the dough with cloth and keep it aside for 30 minutes.
3. Knead the dough once again so that dough becomes stiff enough to roll without extra flour.
4. Divide the dough, by making small round balls from it.
5. Heat plenty of oil in a kadhai, then take one ball of dough and dip a corner of ball in melted ghee or oil and roll it out into 5 to 6 inches diameter. And put the rolled luchi in karai and immediately start flickering hot oil over the top of it with a spatula so that it will swell up like a ball, turn it and cook the other side till it turns golden brown. . Whole process takes around 5-6 seconds.
6. Repeat the same process for all the rolled balls.
7. Serve hot with curries or vegetables.

  1. Well written, no nonsence recipe indeed. Adding a photo would be so tempting. Now this reminds me that I need to write about Luchi in my blog. Even thought it has 90+ bengali recipes, it doesn’t have Luchi yet.

    Luchi is eaten with halwa usually, not curry/vegetables. Halwa + luchi is one of my biggest cravings around that time of month, lol :)
