Macher Jhol is one of the most preferred dishes of people living in West Bengal, India. Macher Jhol or Machchi Jhol is usuallyy eaten with rice. Macher Jhol is quite easy to prepare as you will find while trying your hands at cooking machcher Jhol by following the easy recipe
 
Ingredients:

• 800 gms white-fleshed fish
• 1 large onion peeled, chopped
• 4 whole red chilies dried
• 1/2 tsp ground turmeric
• 1/2 tsp salt
• 1/4 tsp kalonji
• 2/3 mustard oil or vegetable oil
• 1 1/2 tsp finely grated ginger
• 1 tbsp ground coriander seeds
• 1 tsp ground cumin seeds
• 2 bay leaves
• 1 tsp ground turmeric
• 1/2 tsp red chili powder
• 1/2 tsp salt
• 3 whole green chilies

How To Prepare Bengali fish fry:

1. Clean the fillets and cut them in about 4cm size.

2. Mix ½ tsp of turmeric and ½ tsp of salt and rub the mixture on the fillets evenly on both the sides. Keep it aside for 10-15 minutes.

3. Take a non-stick pan and heat oil in it on medium flame. If mustard oil is being used then let it get hot.

4. Now fry the fish pieces light brown from both sides without cooking them completely.

5. Lift out the fish gently and place them in a plate. Turn off the heat.

6. Prepare a paste by mixing cumin seeds, 1 tsp turmeric, coriander seeds, ginger, ½ tsp salt, chili powder(cayenne pepper) and 3 tbsp of water.

7. Leave 5/6 tbsp oil in the pan and remove the rest of oil. Heat the oil on moderate flame.

8. When the oil becomes hot put nigelia seeds in cook for few seconds. Then add red chilies. Let it cook till chilies become a bit darken and then add bay leaves. After bay leaves become dark add onion.

9. Fry onion on moderate flame till it becomes light brown. Add the spice paste prepared earlier to the pan. Fry for about 1 minute. Keep stirring.

10. Now add fish in single layer and 1 cup water. Lay green chilies on top. Spoon the sauce over the fish pieces and simmer for 2 minutes. Cover the pan and cook the fish for 10-15 minutes on low flame.

11.  Machher Jhol (Fish in Bengali Sauce) is ready to be served. Serve hot with rice.
