Mango Chutney Recipe

Mango is the king of all fruits. It is used in many forms like pickles and condiments. In ripe form it is used for juice and many other such preparations. Mango chutney goes well with kachori and such other Indian dishes. Try the easy to make Aam ki chutney and enjoy your food.

 

Ingredients for making mango chutney:

  • ½ kg green mango (Aam)
  • 1 cup vinegar (sirka)
  • ½ cup water
  • 1 tsp red chili pepper (lal mirchi)
  • 400-425 gm sugar (cheeni)  (2 1/2 heaped cup)
  • 4 tsp salt ( namak)
  • 2 tsps long stripes of ginger (adrak)
  • 2 cloves garlic ( lasun)
  • ¾ tsp big cardamom (elaichi moti)
  • 60 gms raisins (kishmish) (4 tsps) 

 

How to make mango chutney:

  •  
    1. First of all wash the mangoes and dry them.
    2. Then peel and cut mangoes into very thin and long slices removing the stones.
    3. Then chop garlic very fine and cut ginger into thin and long slices.
    4. Now cook the mango slices, garlic and ginger in water on a low fire.
    5. When tender, add sugar, vinegar, red chili pepper, cardamoms, salt and blanched almonds and stir until thick and becomes golden.
    6. Now remove from the fire, add raisins and mix well.
    7. At the last cool and put in an airtight jar. Store in a cool and dark place.
