Khajur ki chutney is also a popular Indian condiment. Date is a native to N Africa and SW Asia and cultivated from Morocco to India for its sugar-rich fruits. Khajur ki chutney goes well with paratha and many other such preparations. Try this easy to make date/khajur chutney and enjoy your food!
 

Ingredients for making Khajur Ki Chutney:

  • ½ kg dates ( khajoor)
  • 2 tsp fresh ginger (adrak), cut into thin long strips
  • 4 tsp salt (namak) (level)
  • 1 cup sugar (cheeni)
  • 6 tsp raisins ( kishmish)
  • 1½ cups or 2 cups vinegar ( sirka)
  • ¼ cup blanched almonds ( badam)
  • 2 cloves ( lavang)
  • 2 big cardamoms ( elaichi moti)
  • ¼ tsp ground cinnamon ( dalchini)
  • ¼ red chili powder ( lal mirchi)
     

How to make Khajur Ki Chutney:

  1. First of all stone the dates and cut them in halves.
  2. Then put dates, ginger, ground spices, salt, chili powder and vinegar in a pan and cook till dates are tender.
  3. Now add sugar and cook until the mixture thickens.
  4. Now remove from the fire, add raisins, almonds slit into halves and stir well.
  5. At last pour hot chutney into clean jar and cork tightly. Serve after four days.
