Apricot chutney is popular form of chutney. Apricot or Khumani is the orange-yellow fruit have sweet flesh. In various states of India they make sweets of Apricot. This is a fibrous fruit and hence good for health. Here is an easy recipe to help you learn how to prepare Khumani ki chutney.
Ingredients for making Apricot chutney
- 360 gms Apricot (khumani)
- 1 cup vinegar (sirka)
- 2 cups of water
- 2 tsp salt (namak)
- ½ level tsp red chili powder (lal mirchi)
- 2 big cardamom (Elaichi moti), crushed
- ¼ kg sugar (cheeni)
- 2 tsp raisins ( kishmish)
- 8 blanched almonds (badam)
How to make Apricot chutney:
- First of all put apricot in boiling water till soft.
- Then peel and mash the apricot.
- After that strain the pulp and wash the stones of apricots with one cup of water.
- Now cook apricot pulp, ginger, garlic and water of washed stones, almonds and raisins till all the water is absorbed.
- Then add vinegar, sugar, salt, cardamoms and red chili powder and cook till is thick and golden brown.
- At the last put it in a jar. This can be kept one year.
