Chicken Tikka Masala

Chicken tikka masala is a curry dish of roasted chicken pieces (chicken tikka). It is prepared in a rich red, creamy, spiced, tomato-based sauce. Chicken tikka masala is actually chicken tikka marinated in spices and yogurt and then baked in a tandoor oven in a masala sauce. Chicken tikka masala is one of the popular dishes served in restaurants around the world.

Ingredients for making Chicken Tikka Masala:
Part A:
• 2 lbs. boneless chicken breast
• Melted margarine (for basting)
• 1/4 cup yogurt
• 1/4 tsp cumin powder
• 3 tsp minced ginger
• 1/4 tsp white pepper
• 1/4 tsp mace
• 3 tsp crushed garlic
• 1/4 tsp nutmeg
• 1/4 tsp green cardamom powder
• 1/4 tsp chili powder
• 1/4 tsp turmeric
• 3 tsp crushed garlic
• 3 tbsp lemon juice
• 4 tbsp vegetable oil
Part B:
• 2/3 cup cream
• 2 tsp ginger, julienned
• 2 tsp ginger paste
• 1 tsp fenugreek (kasoori methi)
• 1 tbsp red chili powder
• Salt To Taste
• 2 lbs. tomatoes, chopped 
• 5 oz. tomato paste
• 10 oz. tomato puree
• 2 tsp garlic paste
• 2 tsp green chilies
• 2 tsp cloves
• 8 green cardamoms
• 3 tbsp butter
• Honey to taste

How to prepare Chicken Tikka Masala:

1. Mix all of the ingredients in Part A except chicken, together in a large bowl. Now add the chicken breast to it and cut them into 2 inch cubes.
2. Marinate overnight in the refrigerator. Preheat oven to 350º F. Bake the chicken for 8 minutes, basting with margarine twice.
3. Remove excess marinade and bake for another 2 minutes.
4. Meanwhile make the sauce with the ingredients in Part B.
5. Remove the seeds from green chillies and chop them. Take a pot and add  tomatoes, tomato paste and tomato puree. Also add approximately 4-1/4 cups of water.
6. Mix green chillies, red chilli powder,  ginger and garlic paste,  cloves, salt and cardamoms.
7. Cook it on slow flame until reduced to thick sauce. Strain through a strainer and boil it. Add butter and cream and stir it properly.
8. Add honey to taste if sauce tastes sour.
9. Add fenugreek and ginger juliennes, stir.
10.  Now serve it with chicken tikka masala for mouth licking taste.
