Uttapam Recipe

Uttapam is a very popular dish in South India. It is a dosa-like dish made by cooking ingredients in a batter. The batter for Uttapam is made of a 1:3 ratio of urad dal and rice (1:1 ratio of boiled to non-boiled rice), which is fermented. Unlike crispy crepe, uttapam is thick (without filling) with ingredients cooked right into the batter. Uttapam is traditionally made with tomatoes or an onion-chili mix. Oother common ingredients for preparing Utthapam are coconut and mixed vegetables. Try this easy to make recipe of vegetable uttapam! 

Ingredients for making Vegetable Uttapam:

  • 2 cup rice (chawal)
  • 1 cup split black gram lentil (dhuli urad ki dal)
  • 3 onion (pyaj)
  • 2 tomato (tamatar)
  • a piece ginger (adrak)
  • 2 green chilly (hari mirch)
  • 1 tsp coriander leaves (dhania patti)
  • 1 cup cabbage (patta gobi)
  • 1 capsicum (shimla mirch)
  • 2 carrot (gajar)
  • 1 ½  tsp salt (namak)
  • ½  tsp red chilly powder (lal mirch)
  • oil for cooking

How to make Vegetable Uttapam:

  1. First of all soak rice and dal separately for about 6 hours.
  2. Then grind them separately.
  3. Now mix them in a container and add salt.
  4. Then cover and leave for fermentation for 12 hours.
  5. On the other side finely chop adrak, pyaj, shimla mirch, hari mirch, tomato and dhania.
  6. Then grate carrot and patta Gobi.
  7. Then mix all these vegetables in the batter.
  8. Then mix lal mirch in chawal batter.
  9. Now heat a non stick pan/tawa and spread 1 tbsp batter on it.
  10. Then cook at low flame and grease it on the corners and turn it to cook the other side.
  11. Finally serve it hot.
  12. If the batter sticks on a tawa, add little salt to the oil and grease the corners so that uttapam will not stick on tawa.
  13. Cook it at low flame to make it tastier.
